What once began as Joe’s Snack Counter has evolved into one of Ellinwood’s most intriguing historic spaces. Over the years, this underground venue has served many purposes, including JP Webber’s Sunflower Sample Room and even Ellinwood’s first public library from 1940 to 1960. Today, it has been transformed into the Underground Saloon, offering visitors a chance to experience a taste of history with a Prohibition-era twist.
The Ellinwood Underground City once housed 11 saloons. Our Underground Saloon pays homage to these spaces.
On Friday and Saturday nights, guests can step back in time and enjoy a drink beneath the streets, just as many might have done in the hidden speakeasies of the 1920s. The menu features cocktails reminiscent of the Prohibition era, adding to the immersive experience of drinking in the underground.
